Seasonal Bites: Spring Catering Trends

In-person events are back in full swing, and we’ve been enjoying seeing the bright spring energy manifest in many different ways. From colorful guest attire to an equally vibrant food and bev offering, the spring renewal energy is palpable. We asked catering pros at Maison Benjamin and Great Performances about the top event trend bites and bevs they’ve been serving of late, so read on for culinary inspiration for your next gathering.

“Vegan and gluten-free, healthy dishes and more in particular earthy salads are now included in every menu proposal for this spring,” says Ben Vaschetti, founder of Maison Benjamin.

He continues, “Rosè wine seems as big as ever this year with even an earlier arrival despite chilly temperatures in New York and the Hamptons.”

It seems the vegan trend has been going strong. “There’s been increasing interest in food that’s plant-based and zero-waste – across all event types,” says Carina Hayek, Director of Marketing at Great Performances. “People are so much more aware of their impact on the planet which extends to food choices at events. Our Vegetable Carvery has become even more popular and we’ve been doing a lot of R&D around plant-based takes on classic dishes.”

She continues, “Two dishes we recently featured at an event were our Carrot Tartare (parsley, horseradish, capers, dijon, onyx crisp) and our Chili Glazed Romanesco (savoy cabbage, coconut crème, citrus chutney, herbs).
