12 Cocktails to Sip this Summer
As the temps get hotter, cool down with a creative cocktail, designed specifically for summer. Perfect for poolside or entertaining at home, add these recipes to your repertoire.

Grapefruit Collins



2 oz Volcan de mi Tierra Blanco Tequila
¾ oz fresh lemon juice
¾ oz 1:1 simple syrup
1 oz fresh grapefruit juice
Top with soda water

Shake tequila, lemon juice, simple syrup and grapefruit juice with ice. Strain into a double rocks glass over a large cube of ice. Top with soda water, and garnish with a grapefruit wedge.


Sipsmith Gin & Tonic



1 part Sipsmith London Dry Gin
3 parts Fever Tree tonic

In a glass filled with ice cubes, add gin and tonic. Garnish with a lime wedge.


MARTINI & ROSSI Rosé Spritz (Available at Las’Lap)



1 oz MARTINI & ROSSI Riserva Speciale Bitter
4 oz MARTINI & ROSSI Sparkling Rosé
2 oz IZZE Grapefruit Soda                           
Ruby grapefruit slice garnish

Build directly in large wine glass over cubed ice.



Bacardí Cuatro Manzana



1 part BACARDÍ Añejo Cuatro rum
2 parts sparkling apple juice
2 lime wedges

Squeeze and drop one lime wedge into a highball glass. Add ice and build other ingredients. Serve with one lime wedge.


American Riviera (Available at Belmond El Encanto)



1 ½ oz Baker’s Bourbon
¾ oz Campari
½ oz lemon
½ oz simple syrup
1 ½ oz pineapple Juice
Angostura bitters
Ginger beer

Pour contents in mixing tin (without bitters). Shake and strain over ice into collins glass. top with ginger beer and 2 dashes angostura bitters.


PASSION No. 9



1.5 oz CÎROC VS French Brandy
0.75 oz maraschino
0.75 oz lemon juice
0.75 oz pineapple juice
Bitters

Combine all ingredients in shaker with ice and shake well until everything is chilled. Double strain into a coupe glass. Top with 2 dashes of bitters.


Wonder Woman (Created by Federico Avila; available at Bar Belly)



1 oz soy milk

¾ oz lime juice

1.75 oz Pandan Passionfruit Cordial
¼ oz dry curacao

¼ oz St. Elizabeth Allspice Dram
½ oz Pedro Ximenez
¾ oz DonQ Gran Añejo

1 oz Coconut Yaguara Cachaça

Shake all ingredients together and pour into a large brandy glass with crushed ice
. Garnish with dehydrated pineapple, mint and dehydrated lime.


The Ketel One Botanical & Soda



1.5 oz. Ketel One Botanical  
3 oz. sparkling water

Grab a wine glass, fill it with ice. Choose the garnish: fragrant herbs, crisp citrus or fresh fruit.


Cointreau White Sangria



1 oz Cointreau
4 oz white wine
0.5 oz lemon juice (one half lemon)
0.25 oz simple syrup

Juice one lemon. Combine remaining ingredients in a highball and add ice. Garnish with peach slices and blueberries.  


Antarctic Refresher



2 oz Shackleton Blended Malt Scotch Whisky
0.75 oz honey
0.75 oz lemon
Shake ingredients and pour over crushed ice. 


Icelandic Pineapple Mule



2 oz Reyka Vodka
2 oz pineapple juice
1 oz lime juice
4 oz top ginger beer
Pineapple slice

Combine all ingredients together in a cocktail shaker except ginger beer. Shake, strain and pour into a copper mug. Top with ginger beer.


Amaro Al Fresco



Peroni Nastro Azzurro
1 oz Aperol
¼ oz Fernet Branca
½ oz Dry Vermouth
Orange peel

In a cocktail shaker, combine all ingredients with ice except Peroni and shake vigorously. Fill tall glass with new ice and add Peroni gently, strain ingredients over Peroni gently and garnish with orange peel.
