The Best Cocktails to Try This Spring

As the season turns, we’re reaching for bright, refreshing cocktails made for lingering sunlight and slow afternoons. From citrus-forward classics to floral, lightly bitter twists, these recipes offer a fresh seasonal shift that tastes and feels like spring. 

CAZADORES Pomegranate Paloma

Ingredients: 

1.5oz Cazadores Blanco

.5oz St-Germain Elderflower Liqueur

2oz pomegranate juice

2oz lime juice

Pinch of salt

Grapefruit soda to top

Grapefruit slice

Method: Rim a Collins glass with lime juice and salt. Combine Cazadores, pomegranate juice, and lime juice in the glass and stir. Top with grapefruit soda. Garnish with a grapefruit slice.

Clean Slate (By Bon Vivants)

Ingredients:

2oz Wodka vodka

.25oz Licor 43

.25oz fresh lime juice

.5oz fresh lemon juice

.5oz agave syrup

.5oz fresh cucumber juice

Cucumber wave

Edible flower

Method: Add all ingredients to a cocktail shaker with ice and shake vigorously until well chilled. Double strain into a chilled coupe glass.

Break Maiden (By J. Rieger & Co Distillery) 


Ingredients: 

1oz J. Rieger & Co. Midwestern Dry Gin

.75oz KC Canning Co Blood Orange Ginger Shrub

.25oz Giffard Passionfruit Liqueur

.25oz simple syrup (1:1 water to sugar)

3oz dry cider (we use Austin Eastciders)

Mint sprig

Method: Combine all ingredients in a cocktail glass with crushed ice. Garnish with a mint sprig.

Farmer's Spritz

Ingredients: 

1.5 oz Farmer's Gin

.5 oz fresh lime juice

.5 oz elderflower liqueur

Prosecco

Mint sprig 

Method: Shake ingredients except prosecco in a cocktail shaker with ice until chilled. Strain into a wine glass over fresh ice, top with prosecco, and garnish. 

Cucamonga (By Bar Brucato)

Ingredients:

1.5oz Spring Almond

1oz El Dorado White Rum

.75oz lemon juice

.25oz simple syrup

1 dropper mint oil

3 slices cucumber

Method: Add all ingredients into a shaker, add ice and shake. Strain into Nick & Nora glass. Garnish with mint oil drops. 

Ilegal Paper Plane

Ingredients:

.75oz Ilegal Mezcal Joven

.75oz triple sec 

.75oz Aperol

.75oz lime juice 

Lemon peel  

Method: Build all ingredients in a cocktail shaker. Shake vigorously with ice. Strain up into coupe or Nick and Nora glass and finish with lime zest.

Cosmopolitan

Ingredients:

2oz Aspen Vodka

.75oz Orange Liqueur

.75oz Cranberry Juice

.75oz Lime Juice

Method: Add ingredients to an ice-filled shaker. Shake well. Strain into a coupe or martini glass.

Summer Pisco Sour (By JARANA Peruvian Cuisine & Pisco Bar)

Ingredients:

1.5oz pisco

1oz Aperol

1oz fresh lime juice

1oz simple syrup

1 egg white

Fresh mint leaves for garnish

Method: Dry shake all ingredients without ice for 10–15 seconds until foamy. Add ice and shake again until well chilled. Double strain into a chilled coupe or cocktail glass. Garnish with fresh mint leaves.

Glendalough Distillery Wild Rose Spritz

Ingredients:

1.5oz Glendalough Distillery Wild Rose Irish Gin

.75oz elderflower liqueur

2oz Prosecco

1oz sparkling water

1 large mint sprig

Fresh rose petal or lemon slice for garnish 

Method: Build in a wine glass over ice. Add gin and elderflower liqueur and stir gently. Top with Prosecco and sparkling water. Garnish with a mint sprig and a rose petal or lemon slice. 

Lovely Lavender Lemonade

Ingredients:

.5oz Torani Lavender Syrup

8oz lemonade

.5oz Butterfly pea flower tea, brewed*

Ice

Method: Combine the Torani Lavender Syrup, lemonade, and ice in a tall glass. Gently spoon the tea on top.

*Butterfly pea flower tea: brew 1 oz. leaves in 8 oz. hot water for 10 minutes; strain.

Spicy Matador

Ingredients:

1.5oz Tres Agaves Tequila Blanco

3oz pineapple juice

.5oz lime juice

Half-muddled jalapeño

Black salted half rim

Lime wheel and jalapeño slice  

Method: Wet half rim of a martini or coupe glass with lime and dip in black salt. Muddle half a jalapeño in a shaker. Add tequila, pineapple juice, and lime juice. Fill shaker with ice and shake vigorously for 30 seconds. Double strain into glass. Garnish with lime wheel and jalapeño slice.

Strawberry Sake Spritz

Ingredients:

2.5oz TYKU Sake Junmai

.25oz simple syrup

1oz strawberry purée

.5oz lemon juice

Prosecco to top

Strawberry fan and mint  

Method: Build in a wine glass over ice. Stir gently. Top with prosecco.

Lillet Tonique

Ingredients:

3oz Lillet Blanc

.75oz tonic syrup

3oz seltzer, chilled

Lemon slice

Method: Fill a chilled wine glass halfway with ice. Add Lillet and tonic syrup and stir using a bar spoon until combined. Add seltzer and, using a bar spoon, gently lift the Lillet mixture from the bottom of the glass to the top to combine. Top with additional ice and garnish with a lemon slice. Serve.

Blueberry & Lavender (by Roberto Bracco, Head Bartender, Dante Aperitivo)

Ingredients:

1oz Monkey 47 Gin

.25oz Grey Goose Rouge

.75oz lavender-infused Cocchi Americano

.5oz blueberry (clarified)

.75oz Bitter Bianco

.25oz Pasubio

3 dashes lavender bitters

1 dash saline solution (1:50)

1 barspoon citric acid solution

.75oz Acqua Panna water

Method: Add all ingredients except water to a mixing glass with ice and stir until well chilled. Strain into a chilled rocks glass over a large ice cube and top with Panna water.
